Delicate Neer Dosa Recipe – A South Indian Specialty
Ingredients:
For Neer Dosa Batter:
- 1 cup rice (preferably Sona Masuri or any short-grain rice)
- Water, as needed
- Salt, to taste
For Greasing the Skillet:
- Coconut oil or vegetable oil
Instructions:
For Neer Dosa Batter:
- Wash the rice thoroughly and soak it in enough water for 4-6 hours or overnight.
- After soaking, drain the water from the rice.
- In a blender, combine the soaked rice with fresh water to create a runny batter. The consistency should be very thin, almost like buttermilk.
- Add a pinch of salt to the batter and mix well.
For Making Neer Dosa:
- Heat a non-stick or cast-iron skillet (tava) on medium-high heat.
- Grease the skillet lightly with coconut oil or vegetable oil using a cloth or paper towel.
- Pour a ladleful of the thin Neer Dosa batter onto the center of the skillet.
- Quickly, using a circular motion, spread the batter outward to create a thin, delicate dosa. It should be so thin that you can see through it.
- Drizzle a few drops of oil around the edges of the dosa.
- Cover the skillet with a lid and cook on low-medium heat for about 1-2 minutes. Neer Dosa cooks very quickly, and you don’t need to flip it.
- Once the edges start lifting and the dosa is cooked through, remove it from the skillet and fold it in half or roll it.
- Serve the delicate Neer Dosa immediately.
For Serving:
- Neer Dosa is typically served with coconut chutney, sambar, or a simple jaggery and grated coconut mixture.
