Soft and Spongy Set Dosa Recipe

Ingredients:

For the Dosa Batter:

  • 2 cups idli rice
  • 1/2 cup urad dal (black gram lentils)
  • 1/2 cup poha (flattened rice)
  • 1/2 cup rice flour
  • 1/4 cup yogurt (curd)
  • Salt, to taste
  • Water, as needed

For Serving:

  • Coconut chutney
  • Vegetable sagu or potato curry (optional)

Instructions:

For the Dosa Batter:

  1. Wash the idli rice and urad dal separately and soak them in enough water for 4-6 hours.
  2. Rinse the poha thoroughly and soak it for 15-20 minutes before grinding.
  3. Drain the water from the soaked urad dal and rice.
  4. In a blender, grind the soaked urad dal with poha, adding water as needed, until it becomes a smooth and fluffy batter. Transfer it to a large bowl.
  5. In the same blender, grind the soaked idli rice with rice flour and yogurt until you get a smooth batter. Mix it with the urad dal batter. Add salt to taste and combine well.
  6. Allow the batter to ferment in a warm place for 8-12 hours or overnight. The batter should rise and become airy.

For Making Set Dosa:

  1. Heat a non-stick or cast-iron skillet (tava) on medium-high heat. The skillet should be hot before making dosas.
  2. Grease the skillet lightly with oil using a cloth or paper towel.
  3. Pour a ladleful of the set dosa batter onto the center of the skillet. Do not spread the batter like regular dosas; let it naturally spread into a small, thick circle.
  4. Drizzle a little oil around the edges and on the top of the dosa.
  5. Cover the skillet with a lid and cook on low-medium heat for about 2-3 minutes until the dosa becomes soft and spongy on the inside and turns golden brown on the bottom.
  6. Remove the set dosa from the skillet and keep it covered to retain its softness.
  7. Repeat the process to make sets of 3 or 4 dosas per serving.

For Serving:

  1. Serve the soft and spongy set dosas hot with coconut chutney and, if desired, a flavorful vegetable sagu or potato curry.
